Pouilly Fuisse is a type of Chardonnay from near Macon in Burgundy. Pouilly and Fuissé are two distinct villages. The large wine area actually covers 4 villages that produce a lovely, very drinkable white wine sold under the name of Pouilly Fuissé. The wine is at its best with almost any kind of fish and chicken dish because it has the ability to hold its own flavor without interfering the with the flavor of the food. Because of its delicacy it is a favorite with shellfish and oysters . Pouilly Fuissé is best when aged for five years. However, it can be kept and slowly mature for 20 years. It should not be confused with Pouilly Fume which is from the Loire valley and made from the sauvignon blanc grape.

Pouilly Fuisse ishas a distinctive lighter, flinty taste the comes from the limestone terroir of the villages where it is grown. Consequently it is a purely French variety whose taste cannot be duplicated anywhere else in the world.
There are 42 villages in the Mâconnais region, broken out into seven designations: Macon, Macon Superieur, Macon Village, Pouilly Fuissé, Pouilly Loche, Pouilly Vinzele, and Saint Veran.
Pouilly Fuissé is the most highly regarded region in the Maconnais area. Only Chardonnay grapes can be grown here and it is only around 2,100 acres large. They are normally aged in the barrel for a year and can be aged in the bottle for a few years before drinking.
